Vegan Smothered Burritos

Ingredients:

BURRITOS

2 cups smashed black bean burgers

1/2 cup salsa

1/4 cup soy cheese

1 packets Sazon seasoning

1 can green enchilada sauce

6 small tortilla shells

ALOT GUACA RECIPE

2 large avocados

1 tbsp lemon juice

1/4 tsp black pepper

1 tsp salt

1/2 tsp cumin

1/4 tsp chili powder

1/4 tsp garlic powder

Directions

Set oven to 375. Mix black bean burgers, salsa, Sazon seasoning, and soy cheese. If the burgers are already heavily seasoned, you may want to leave out the Sazon. Fill tortilla shells, roll and place in well greased casserole dish. Cover in green enchilada sauce. Bake for 20-30 minutes or until edges are bubbly. While it’s baking, peel and mash avovado. Mix in lemon juice, black pepper, salt, cumin, chili powder and garlic powder. Get it all creamy! Place in fridge to let the flavors meld.

Serve warm with Alotta Guaca and/or vegan sour cream. I love the Super Easy Spanish rice as a side dish to these!
